"This seasoning mix is based on the 'Argentinian Chimichurri Rojo'. There are lots of variants, but our version uses paprika to give it a red tint and jalapeno chillies to give it a kick. It was used by Gauchos to season meat after cooking, but ours is best used as a marinade or seasoning before cooking."

Preparation
You'll Need: 1-4 Beef steaks
1. Coat both sides of the steaks (enough for up to 4) with this mix, leave to marinate and warm to room temperature.
2. Pre-heat a griddle pan to a medium/high heat (or grill on the BBQ), brush with olive oil and then sear the steaks for 1-3 minutes on each side, depending on how you like your steak cooked.
3. Take the steaks off the griddle (or grill), immediately wrap in foil, then cover in a tea towel and leave for 5-10 minutes. This will allow the meat to relax and helps your steak stay nice and tender.
4. I recommend serving up with some chunky chips and salad.
